Taco Pizza


Homemade tacos are a favorite at my house. Taco Bell is just a few blocks from our house, but nothing beats a homemade taco. Now I'm not going to give a recipe for homemade tacos, I think everyone pretty much knows how to make them...but what make them really different from Taco Bell is that I fry the corn tortillas until they are just a little crisp around the edges and chewy inside....yummmm. I have also on occasion made my own corn tortillas which are delish also....but too much work for tacos...just too time consuming.

But what I want to share with you is what I do with my leftovers...I make a taco pizza!!

Unfortunately I don't have a picture to show you...but the taco pizza is even better that the tacos. And kids love it....

Here's what I do....

I use a Pillsbury pizza crust (usually found in the section where biscuits are sold, if you can't find it you can use a Boboli or even crescent rolls), prepare according to the instructions in a large cookie sheet/jelly roll pan. Bake it for about half of the time shown. Remove from oven and spread your leftover seasoned meat (and beans if you use them) and top with shredded cheese, return to oven until crust is brown and cheese is melted.

Top pizza with diced tomatoes, sliced olives, diced onion, and shredded lettuce.

We then like to drizzle the top with Ranch Dressing....cut into squares and serve.

There was a great quote in a Tom Robbins' book Jitterbug Perfume: "Death has his allies and we must have ours. Do not underestimate how much comfort and solace, how much soul and transcendance there is to be found in a well made taco and a cold bottle of beer" (I may have left out a word, but that's the gist.)

Get out!! I can't wait to try that taco pizza. Forget leftovers, I'm going straight to the pizza, no passing go, no collecting $200......wait, maybe I'll take the money, then make the taco pizza. :))
