Donna's Rum Cake

Speaking of family.....here is my Mother-in-laws Rum Cake recipe, she was one of the best cooks I know....

Donna's Rum Cake

1 c. chopped pecans
1 pkg. yellow cake mix
4 eggs
1/2 c. cold water
1/2 c. oil
1/2 c. rum
Grease and flour a bundt pan. Sprinkle the pecans in the bottom of the pan. Mix remaining ingredients and pour over pecans. Bake 1 hour or until done. Cool, leaving the cake in the pan. With the cake still in the pan, using a skewer...poke holes in the cake.
Glaze:
1/4 c. water
1 cube butter
1/2 c. rum
1 c. sugar
Combine all ingredients except the rum in a small saucepan. Cook over medium heat until boiling for 5 minutes. Remove from heat and stir in rum. Drizzle over the cake. When the glaze is thoroughly absorbed, remove cake from pan.
Delicious.....but be careful breathing around an open flame...

Family Reunion in Oregon

Last weekend my hubby and I met his sister Cindy and Aunt Dixie in Colusa for a trip to Malin, Oregon. It was one heck of a drive!! But with good company it seemed to make the time fly by.


The family reunion was for the Wilson family....which is (bear with me here..) my hubby's grandmother's (known as Hattie, Nana or Big Nanny) family. She was one of 6 children, and although sadly none of them are no longer with us...this reunion was all of their children, grandchildren, etc. etc. approximately 120 people attended. It was a great turnout and lots of fun to see people we hadn't seen in a long time and for me to meet alot of people I had never met before.


It was a great time....but my tail end is still recovering from the drive!

Happy Hump Day!

Happy Wednesday to all....... today I spent the day with my good friend Ann. It is always a wonderful day just spending time with her.
This is the second day of my blog.......yipppeeee......... check out the picture I posted today of my daughter and "grandson".....his name is Adonis and I think he is probably the closest I will get to a grandchild from her. He is adorable....isn't he.....

It is one of my favorite recipes.....I know it sounds a little weird and really sweet...but give it a try....they are great with ice cream.

Mountain Dew Apple Dumplings

Mountain Dew Apple Dumplings

2 Granny Smith apples
2 cans crescent rolls
2 sticks butter
1 1/2 cups sugar
1 teaspoons vanilla
cinnamon
1 small can Mountain Dew
Peel and core apples. Cut apples into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan. Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour over apples. Pour Mountain Dew around the edge of the pan. Bake at 350* until puffed, brown and bubbly, approximately 40 minutes.

Today is the first day of my blog!!

Woohoo....today is the first day of my blog....and who knows how many readers I get.....but I know at least my kids will read...to see if I say anything about them!!
I love to cook alot so I plan on sharing alot of recipes on this site. Tonight for dinner I made pork tenderloin with an apricot preserve glaze and zucchini and corn fritters. I am one of those cooks who doesn't normally follow a recipe (unless it is baking a cake, cookies, etc.)....it's usually a cup of this, add an egg..maybe two, a dash of this and a shake of that. But I am going to TRY to put the food that I share into a recipe that everyone can make. Also I am a Paula Deen meets Sandra Lee kinda cook....quick, easy and to heck with the calories (that is why you will rarely if at all see pictures of me on this site) The first recipe that I am sharing is for the zucchini and corn fritters.....I hope that everyone enjoys.
And....if I get the camera that I am hoping to get (when my husband gives me the greenlight to buy....and to clarify..I don't normally ask for him to approve anything I do, but since I am unemployed, I would kinda feel guilty about buying it without hin knowing.....it's not like the shoes I can sneak into my closet!!) I will start posting more pictures on here to share.
