Walnut Cake
2 c. walnuts, chopped very fine
1 c. sugar
6 eggs separated
pinch of salt
sweetened whipping cream
raspberry jam
Beat the 6 eggs whites until stiff (but not like meringue)
In a separate bowl beat the egg yolks with the sugar until fluffy.
Add the nuts and salt.
Fold in the beaten eggs whites.
Divide the batter among 3 cake pans (spring form pans work the best), which have been generously greased and floured (this cake sticks to the pan very easily).
Bake at 350* for 30 to 40 minutes, until cake springs back when touched.
Cool the layers on cake racks.
Beat the whipping cream until desired consistency. Layer the cake with the whipped cream, and spread raspberry jam. Frost entire top and sides, spreading with jam as desired.
ENJOY!!
*****NOW A GIVEAWAY!!! HOW ABOUT A BRIGHTON BUSINESS CARD HOLDER??
Yesterday I mentioned that I had recently won a contest...again!! Woo hoo! I won the new header and background for my blog....which I absolutely love!
So....I believe in Karma...and I believe in paying it forward.
So I want to give this Brighton Business Card Holder away....
Now, I want to make a disclaimer here....this was not donated by Brighton, who I would wish would be a sponsor of mine.....geez, I have given two of their items away already! But I bought this for myself and well......have no need for it now.
So all I want you to do is to make a comment and make sure you leave your email address. Please only one comment person. A winner will be chosen at random (the way I pick the number is..."Hey honey pick a number between --- and ---", so I guess you could call my hubby the random number generator. (He's been called worse things!!)
Everyone have a great weekend!!

Really cool banner, I don't blog but has a friend who does and shes slaving over it 5 months later and has just put up another one.
If I win, just want you to know I'm a karma kid too and I believe it has done me well.
I won't bore you with the stories but you get the drift, mine don't involve posting things across the US though. -blessings all.
My fingers are crossed that the number generator picks me...........lol, you are too funny , you should be a comedienne/ TV presenter.
The cake looks very good but I'm already wondering how to make one with a racetrack in a number 8 for my boys bday in Decemeber so just so you know I won't be attempting it any time soon.
Hi fishin' mama - would love to win that case, it looks great. What a shame they don't want to sposor your give aways. Thanks for the contest.

That cake looks fabulous. I'm all for making cakes and cookies from unusual ingredients. I'm definitely going to try it. I'm a stay at home mom and I'm just starting a clothing line for children and I just got my new business cards this week. I need a business card holder and this Brighton one is really beautiful. That's a lovely antique-looking card case. My card case fell apart a couple of years ago and I've been just cramming them into a pocket in my wallet since then. Not as classy as this for sure.
I only took a very quick look at the cake; I'm on a diet and I was afraid the calories would leak through my monitor and jump on me. lol

Love the business card holder. Could make this WAHM look a little more professional. Thanks for the recipe, too.
I wonder if I could make this cake with pecans as I am allergic to walnuts. I sure could use the business card holder as I am a torchwork glass bead artist/jewelry designer.
